VG-10 contains 1% carbon, 15% chromium, 1% molybdenum, 0.2% vanadium, and 1.5% cobalt. At 60-62 HRC it forms fine vanadium carbides during cryogenic heat treatment that hold a razor edge longer than 440C's 58-60 HRC. If you're cutting daily and value longer intervals between sharpenings, VG-10 is the upgrade; if you're occasional-use or starting out, 440C is fine.
